Triple Chocolate Protein Bars


I had to start my week of protein bars with these simply because I personally LOVE everything chocolate, but I especially love everything chocolate when it’s HEALTHY!


Each bar has about 15 grams of protein, depending on the size. These are SO DARN YUMMY it’s hard to believe they’re SO DARN GOOD FOR US!


Okay, no more talking, here’s the recipe:


Ingredients:

For the bars-

1 cup all natural peanut butter

3/4 cup chocolate protein powder

1/4 cup maple syrup

2 Tbsp cocoa powder

2 Tbsp oat flour (I just grind up oats to make this)

1 tsp pure vanilla extract (or just dump some in 🤤)

1/4 tsp sea salt


For the topping-

1/2 cup cocoa powder

1/2 cup coconut oil

1/4 cup honey


Instructions:

For the bars-

  • Combine all the ingredients and mix together very well.

  • Press into a 9x9 square baking dish lined with parchment paper until flat, firm and smooth on top.

  • Put in the freezer while you make the chocolate topping.

For the topping-

  • Place the ingredients in a small, heavy bowl.

  • Place the small bowl of ingredients into a larger bowl with a bit of hot water in it.

  • Mash and mix the oil, honey and cocoa powder until it is easy to stir and then remove it from the warm water.

  • Continue to mash and mix until is fully incorporated.

NOTE- do not allow the ingredients to become too warm and liquified or the oil and honey like to separate. I just use the warm water bowl to help soften the ingredients so they mix together better.


Finish-

  • Pour the chocolate topping over the cold bars and spread evenly with a spatula.

  • Place the bars back in the freezer for 10-15 minutes.

  • Before cutting, allow to sit in the counter for about 5 minutes to soften bars and prevent splitting. Cut into 8-12 bars.

  • Sprinkle with a bit of sea salt for an extra little party on your tongue!



There you go! These are so quick and easy and delicious. They do stick to the roof of your mouth a tiny bit, but nothing a bit of water won't help.
