Quick, Healthy Warm Apple Dessert

So the inspiration for this little dessert dish came after my husband brought home these delicious looking danish things with some sort of apple pie filling in the middle and a sweet, icing drizzle on top. 🤤
The thing is, part of my New Year’s resolution was to give up processed sugar and snacks anytime I can. So when my husband offered me one, as SO DARN TEMPTING as it was (and I mean it was tempting- I ALMOST caved! Had he asked one more time I would have given in and eaten it) I remembered how low energy, foggy minded and emotionally rocky I felt around the holidays when I so freely indulged in anything and everything … so I held my ground and sadly said, “no thank you”.
And if you have children, you know they that do as we do. So our daughter has decided that she wants to also try not eating processed sugar and snacks when possible, so she also didn’t eat the danish.
But I could see the little sadness in her eyes as she watched her brothers enjoy the little treat their dad had brought home and I didn’t want her to associate choosing to fuel our bodies in a healthy way with missing out on yummy treats, because that’s not how it is.
So I told her that just because we chose not eat the treat, doesn’t mean we don’t get any treat… and she lit up!
I explained to her what I planned to make and she got so excited to not only have a treat that was healthy, but also spend some girl time together making it.
So we got to work chopping apples and talking about how healthy eating doesn’t mean we don’t get yummy treats.
Here’s what we came up with: (keep in mind I didn’t follow a recipe, I just threw some stuff together so I’ll share it the best I can. But if you make this use your own judgement on amounts you want.)

Ingredients:
4 apples
About 2 Tbsp coconut oil
Cinnamon (I sprinkled a generous amount on top)
1/4 tsp nutmeg
1/2 cup water (divided)
1/2-1 Tbsp cornstarch (or whatever thickener you like to use)
How-To:
Chop your apples into small chunks
Cook the apples in coconut oil, 1/2 the water, cinnamon and nutmeg until soft
Once the apples are soft to your liking, stir the cornstarch into the remaining COLD water and then pour it into the apples to thicken the sauce.
Allow to cool a bit and serve with yogurt on top (we used l.reuteri yogurt for an extra health kick. Check out the recipe for l. reuteri yogurt here on my blog and the video tutorial on my IG page.
This kids LOVED this! They said it was equally as good as the treats dad brought home. We ate the entire thing and I thought for sure we’d have leftovers for tomorrow. Oh well, I’m glad it was a hit! And I loved another opportunity to show my children that healthy eating doesn’t have to mean depriving ourselves.
