Okay I don’t know about you, but I LOVED tomato soup when I was a kid!
There was nothing better than seeing my mom or dad pull that Cambell’s can out of the pantry, plop that jellied blob of tomatoey goodness into a pan and heat it to just the right temperature before drowning it in salty soda crackers and indulging.
Then I became an adult, my own person with my own choices… oh, and I learned to read! I learned to read before I became an adult BTW.
Anyways, becoming a fully literate adult opened a whole new world for me, a world I didn’t know existed, a world beyond canned soup and their bad-for-your-health ingredients.
I learned about MSG (mono-sodium glutamate), how my body HATED it, how bad it is for us and that it was in most canned soups!
So I went on a mission to learn how to make soups from scratch!
Welcome to the world of BONE BROTH!
Guys, if you haven’t made your own bone broth- YOU HAVE TO!!! It takes soup making to a whole new level. I’ll get more into that in another post, but for now, just trust me and make your own broth!

Anyways, this tomato soup recipes is one of the easiest, and yummiest soups you’ll try! There’s a more detailed, yummy recipe in my cookbook… but if you’re looking for something super quick and easy, this one will do.
Here it is:
Ingredients:
Lots of tomatoes, preferably garden, but store bought will do.
A full onion, chopped nice and fat
A whole garlic bulb. You can separate the garlic chunks if you want, don’t have to.
Olive oil
Salt, pepper and basil
3 cups bone broth
Instructions:
Cut the tomatoes in half and fill your cookie sheet that has been lined with parchment paper.
Add your onion and garlic to the cookie sheet.
Drizzle with olive oil.
Bake at 400 until they’re roasty and darkening.
Add to blender with bone broth.
Blend until it’s smooth or chunky, whatever you like.
Add to pot along with spices and cook until warm and you’re hungry.
For an added bonus, serve with grilled cheese! This takes it to the next level!
Now, if I were superwoman, I would have served mine with a grilled cheese on fresh, home made bread with cheese I made myself from a cow I’m raising my backyard… but I’m just a small-town mama of 4 here doing my best and so today’s soup came with half-burnt grilled cheese made on Costco’s rye bread. But it was still delish!

My Dad always made home made chicken noodle soup from scratch every Sunday! He was the soup king. He would simmer it for hours and the house smelled amazing! It was the best chicken noodle soup and I looked forward to it each week! 😊
