Coconut Banana Baby Biscuits

The first 5 years of a child’s life are critical years for their physical, cognitive and emotional development and how we fuel their little bodies has a major impact on this development.
Sugar, preservatives, artificial flavours & colours along with all those other ingredients we can’t pronounce, let alone know what they are, have a very negative effect on the development of our littles.
ADHD, hormone disruption, behaviour issues, neurodevelopmental effects, memory problems, allergies, gut and digestive issues, cancer, problems focussing, mood swings, diabetes, heart disease, grogginess, less muscle mass, impacted growth and low energy levels are just a FEW of the ways their development is impacted by these toxic ingredients.
But kids are ALWAYS hungry!!!! And those packaged snacks are just SO CONVENIENT! This is true.
However, considering the health risks they pose, is it worth it? Especially when there are healthier options that are quite simple and quick to make.
The recipe I am sharing below takes 5 minutes to toss together and 10-15 minutes to bake. It’s a hit with my kids and they eat the whole batch within 1-2 days, which is fine because it’s simple enough to mix up another batch. 🤗
The other great thing is that not only do they NOT pose any of the risks I listed above, but they actually have a lot of health benefits! I’ll list a few below:
Coconut Flour:
High in fiber
Gluten free
High protein
Great source of iron & potassium
High in lauric acid which contains antibacterial, antiviral and antifungal properties which provide immune support.
Eggs:
Excellent source of choline (helps the brain and nervous system regulate mood, memory, muscle control among other functions).
High in protein (all 9 essential amino acids)
Vitamins A, D, E, B- complex, folate, selenium, phosphorus
Bananas:
High in fiber
Essential nutrients like potassium, magnesium, vitamin B6, vitamin C, antioxidants and phytonutrients
A natural sweetener
Maple Syrup:
Great source of magnesium, zinc, calcium and potassium
High in antioxidants
Easier to digest than refined sugar
Lower glycemic index which helps to regulate blood sugar levels
I don’t know about you, but those are some pretty amazing health benefits for such a simple, quick and easy little snack.
In the time it would take me to pack up my little crew of chaos, drive 4 blocks to the grocery store, find the snacks, pay for the snacks (all while arguing with my children about WHY I am not buying them everything they touch), load the kids back into the vehicle (and now they’re fighting over who gets in first), return home, try to get them all out of the vehicle, deal with the scraped knee because the 4-yr-old fell on the sidewalk racing his brother to the house… (Gosh, I’m exhausted just thinking about it 🤣) I could have easily had these biscuits made while they played outside.
So let’s all save ourselves the headache of attempting to leave the house with children and just make the darn biscuits!
You will need:
1/4 cup coconut flour
1 very ripe banana
1 egg
1 Tbsp maple syrup (or honey)
1/2 tsp pure vanilla extract
You will have to:
preheat your oven to 325°
Mash the banana and then mix in the egg, maple syrup and vanilla.
Add the coconut flour and mix it in. Let it sit for about five minutes to fully absorb.
Spoon it out on a cookie sheet greased with coconut oil or parchment paper. I use a 1/2 Tbsp measuring spoon to scoop it out. Press down a little with a fork to flatten.
Bake for 10 to 15 minutes.
Enjoy warm or put in the fridge for up to four days and eat whenever you’d like.
