Carrot Salad: With A Twist

Have you heard of raw carrot salad before? If you own my cookbook then you have potentially tried a variation of it, but are you aware of the health benefits? It's actually INSANELY good for us, especially us ladies!


According to Dr. Ray Peat, the original creator of the raw carrot salad, it can help to balance our hormones and manage estrogen dominance if we consume it once to twice a day, ideally on an empty stomach as this helps with gastrointestinal absorption.


You see, raw carrots contain a unique type of fibre that binds to endotoxins and excess estrogen, safely eliminating them from our bodies.


Some of the positive side effects of consuming raw carrot salad are:

  • Less painful menstrual symptoms

  • Improved digestion & bowel regularity

  • Optimal liver & thyroid function


The raw carrot salad in my cookbook, which I called "Apple Carrot Salad" is my own twist, a bit more of a kid-friendly version, on Dr. Peat's salad and the one I made the other day is a twist on that twist but incorporates more of Dr. Peat's ingredients.


This recipe, which wasn't planned-

I just threw together, turned out to be a major hit with all but one of my kids 😆, so I’d recommend giving it a try.

Carrot Salad: With A Twist

Ingredients:

  • 3 large, shredded carrots

  • 2 Tbsp coconut oil

  • 2 apples (chopped small)

  • 1 tsp apple cider vinegar

  • Pinch of sea salt

Directions:

  • Peel carrots to clean them and then use your peeler and continue to peel the carrots into a bowl until you’ve peeled down to the core. My kids like to eat the carrot cores.

  • Chop apples small and cook them in coconut oil, on medium heat until soft.

  • Sprinkle on the cinnamon, salt and apple cider vinegar.

  • Allow the apple mixture to cool a bit and then mix it in with your peeled carrots.

  • Eat on its own or as a side dish with your meal.
