Cookie Dough Protein Bars



Okay here’s the 3rd protein bar recipe I am sharing with you guys!


These cookie dough protein bars can be made with chocolate chips instead of the chocolate drizzle, however, I drizzled on my home made chocolate sauce instead of using chocolate chips just to make them healthier.


With that said, feel free to add some mini chocolate chips to the batter before pressing it into the baking dish.


These are quick and simple. No baking, just warming of the wet ingredients and freezing the batter to solidify it.  Once they’re made they can be stored in the fridge. I don’t know how long they’ll last for before going bad as we usually eat them within a couple days. 🤣


Here’s the recipe:


Ingredients:

3/4 cup all natural peanut butter

1 Tbsp coconut oil

1/3 cup maple syrup

2/3 cup vanilla protein powder

1 tsp pure vanilla extract (or just dump some in 🤤)

3 Tbsp coconut flour

1/4 tsp sea salt


Instructions:

  • Melt the peanut butter, maple syrup, vanilla and coconut oil in a small pot on the stove.

  • Remove from stove and add the dry ingredients.

  • Mix and allow to sit for about 5 minutes to allow the coconut flour to fully absorb in.

  • Depending on the type of protein powder you use it could make this dough a bit crumbly (which it shouldn’t be, it should be soft like play dough) so if that happens either add a tiny bit of milk (whatever kind you drink will work) or a bit more maple syrup.

  • Press into an 8x8 baking dish, or a bread pan for a thicker bar, lined with parchment paper and set in the freezer to solidify.


Chocolate Topping:

Ingredients:

1/2 cup cocoa powder

1/2 cup coconut oil

1/4 cup honey


Instructions:

  • Place the ingredients in a small, heavy bowl.

  • Place the small bowl of ingredients into a larger bowl with a bit of hot water in it.

  • Mash and mix the oil, honey and cocoa powder until it is easy to stir and then remove it from the warm water.

  • Continue to mash and mix until is fully incorporated.

NOTE- do not allow the ingredients to become too warm and liquified or the oil and honey like to separate. I just use the warm water bowl to help soften the ingredients so they mix together better.
