Zucchini Frittata - don't skip this one!

I don’t grow zucchini in my garden because I usually end up receiving a few extra large ones from generous friends and I don’t always know what to do with it.


Well, that is about to change because I made a frittata that was a massive hit with everyone in my family.


I’ll back up a bit. After being gifted some zucchinis I asked my husband what on earth I was going to do with all of it? I know I can freeze it, but I wanted more than just a muffin recipe (although the chocolate muffin recipe is pretty amazing!).


He told me to make a zucchini casserole. Apparently it was one of his favourite things growing up that his mom and grandma used to make.


After googling zucchini casserole recipes and learning I’d have to slice and lay the zucchini in rows this option quickly became a no-go!


So I started sharing my zucchini dilemma with friends and asking for recommendations on meals with zucchini in them.


One friend recommended a frittata, said it was a hit with her family and very kindly shared her recipe with me.


So here's the thing, I didn't actually know what a frittata was, but after looking at the recipe, it looked delicious and worth trying. And here's another thing, if you know me, you know I rarely follow a recipe how it’s written, and so after receiving this recipe it did not take long for me to come up with ideas on how I could tweak it.


After the brainstorm had calmed, I got to work chopping, dicing, and trying my hand at making a meal I had never attempted before. The end result was better than I could’ve ever imagined, especially considering I didn’t even know what a frittata was before starting this adventure. 😂


The best part came after I fed it to my family and not only did all of my kids ask for seconds (including the toddler who only eats eggs when his stars align), but my husband told me that it was this the best zucchini recipe he had ever tried and far surpassed the zucchini casserole that his mom made in his childhood! 🤯 The ultimate compliment! 🤣
