Protein Chocolate Pudding

So, I don’t know about you, but it doesn’t matter how healthy I eat all month… When that time comes around and my hormones start shifting, my focus shifts entirely to sugar and how I can it into my body A.S.A.P!!!
All the prior thoughts about high protein, low carb, no sugar and fuelling my body as clean as I can are thrown so far out the window they risk never to be seen or heard from again and are replaced with obsessive, intrusive thoughts about all the things I know I shouldn’t have.
Thoughts of living in a house made of chocolate fudge brownies with vanilla bean ice cream in the water dispenser and towers of chocolate chunk cookies lining the walkways take over my daydreams… it’s extreme (I might need to seek help 😂).
But, despite what you just read, I’m actually quite serious about my health and so allowing those thoughts to turn into reality and ruining all the hard work I’ve put in up until that point isn’t an option for me. With that said, if the brownie house was even an option, I might go for that!
Don’t get me wrong, I definitely have sugar-filled treats every now and then…I might have eaten two ice cream drumsticks yesterday 🤣, but for the most part I work hard to stick to what I know is going to fuel me.
And this whole issue was actually a huge contributing factor to my cookbook. I had turned unhealthy indulgences like chocolate brownies, pudding and muffins into gluten-free, refined sugar free, dairy conscious alternatives!
So this next pudding recipe does have dairy in it, but if you’re not avoiding dairy it’s AMAZING!!!
This is a super simple, basic recipe. So simple that there’s really nothing more to say about it other than that, haha. Oh, and that it’s one of those recipes that you might just find yourself making a large batch of and keeping it in your fridge so you can have a little treat every day (if it lasts more than one day that is. It definitely doesn’t in our home- the more I make, the more we eat! 😂)
Okay enough talk, here’s the recipe! 👇🏻
Ingredients-
1 1/2 cups cottage cheese
1 1/2 cups plain, Greek yogurt
1/3 cup cocoa powder
1/3 cup honey or maple syrup (they’re both great!)
1 Tbsp pure vanilla extract
Blend the cottage cheese until it’s nice and smooth. Then add the rest of the ingredients and blend until it’s mixed well and looks like pudding.
Eat.
Oh, for an extra treat you can shred unsweetened bakers chocolate on top!
You can chill it for 30 min first if you have the willpower to wait, but you don’t have to, we never do.
